Just use a vegetable peeler. Works great.

The Y peelers are better, but the standard old potato peelers work fine. I shave cheese, carrots, asparagus, lots of random stuff with them. It's fun visually and texturally.
PSA: Do NOT try it on your balls.

Baby bok choy, cauliflower, and tofu skin stir fry. Easy and tasty.

Spicy carrot "bulgogi" with rolled omelette and kimchi mandu. I make most things myself, but I love these frozen mandu and you get a huge bag for $10. Carrots btw were very fun this way.

This one got weird, but it was delicious. A cross between a salad and a panzanella.

Italian winter greens, sourdough croutons, lobster, thinned spicy vodka tomato sauce, corn, roasted red peppers, balsamic, olive oil, a furious dusting of grana padano.
