Anyone got any must-do kumquat recipes? The tree in my backyard has gone nuts. The main thing that pops up online is marmalade.

There’s also a loquat tree but it hasn’t produced quite yet.

First time I had a kumquat, my brother in law plucked one off a tree in Isla Mujares and popped it in my mouth. I had no idea what the fuck I was eating (in fairness to me, I was 15 and they were not readily available in Michigan at the time).

I do have a recipe I have not tried. I will try to remember to post it but I have a recipe in a book at home for kumquat preserves.
 
What do you do with loquats? I have started pulling off the fruit as soon as I see it to stop the Raccoons grabbing it all. Too many seeds and not enough actual fruit to make them worth doing anything with, they usually end up in the green recycling.

Did you like it? Doesn't seem to me average 15 year old would like them. Kumquats make my mouth feel weird.

Ended up taking about 20mins less than it would normally does in a loaf pan. Added some cocoa powder for extra depth. Texture came out amazing...a little crispy on the outside.

Day 1 of ramen cooking beginning for dinner Friday and likely many more after. Going for 10-12 quarts. Kombu, shitakes, chickens, couple pounds of bacon, and now a bunch of pork neck bones that I’ll simmer for 12-24 hours. Pork belly also in fridge brining.

Tare, noodles, eggs, and some collard greens either tomorrow night or Friday morning.

The payoff was one of the better meals I’ve cooked. Toasted rye noodles were perfect and the stock itself was also spot on. Topped with belly and collard greens. Only thing I failed on here was the eggs. Had perfect 6 min 190 degree eggs soft boiled but I simply can’t peel eggs. Hate it. Marinated hard boiled instead...
