Fuck calzones. Crust is garbage. Fillings are undercooked. I burn the roof of my mouth every time.
 
Pasta with a tomato onion garlic base, touch of cream and some cream cheese along with some fresh parm to get it creamy. Tossed in some fresh spinach to round it out.

seared skin on black gulf grouper with fresh thyme, garlic and a red pepper mash compound butter.
Did mahi for the kiddos to finish off the rest of the side of fish.

Anyone got any must-do kumquat recipes? The tree in my backyard has gone nuts. The main thing that pops up online is marmalade.

There’s also a loquat tree but it hasn’t produced quite yet.
 
Day 1 of ramen cooking beginning for dinner Friday and likely many more after. Going for 10-12 quarts. Kombu, shitakes, chickens, couple pounds of bacon, and now a bunch of pork neck bones that I’ll simmer for 12-24 hours. Pork belly also in fridge brining.

And since I love spicy ramen.. some ass burner chile/garlic oil.

Tare, noodles, eggs, and some collard greens either tomorrow night or Friday morning.
