I'm with you in that a shepherd herds sheep and therefore it needs lamb. But adding cheese to something does not invalidate the thing to which cheese is being added even if it's not a traditional ingredient. It's an upgrade. A burger isn't suddenly not a burger if you add cheese. It's a better burger. A burrito doesn't require cheese but it's better when smothered with queso. Those look good as hell. I've been meaning to make Korean fried chicken wings.

I'm sure a lot of folks will find this gross and I am weirdly bad at food pics for some reason, but this is smoked Cincinnati chili. Essentially just the recipe from the seasoning mix but I smoked the beef with s&p on mesquite for 90 minutes first. Also cooked it down to a thicker consistency than typical Cincy chili. We call it "dry" where I come from.
