What are you cooking???

I caught a striped bass in Long Island Sound and cooked filets that night. Now a couple days later, I scooped out meat from leftover pieces, heated it up, threw some capers on top. Put it on a toasted bun with a little butter spread on it.

Threw in some Trader Joes sauerkraut & pickles with their veggies chips on the side.

I had tried the Kenji recipe for gyro meat a while back and the meat was really moist and kind of fell apart. I found a recipe from Alton Brown that is similar except that he puts the onion in the cuisinart first and gets it really fine. Then he rings it out in a towel before adding meat and spices, etc. the onion released a lot of water. This time the meat came out perfect.
