Pizza Pizza

Why a mistake? I love blending those two.

I have blended these in the past, especially when I use Galbani (which I enjoy when Provolone is used in small amounts). I am super lucky, the local store has Grande Mozzarella. The deli wasn't open but someone who worked there was under the assumption that the store labeled cheese was Grande. Which I am pretty sure it is.

Provolone plus Grande was just a bit too overpowering. There a lot more "tang" than I like. I have also had this happen when I have used my wife's starter to make dough. The wife agreed the cheese had too much "tang". I had some of the leftover mozzarella on tonight's garlic bread and there was definitely a "tang".
 
Went to No Saint in NE Portland on Saturday. This has been on my "need to try" list for a while now.

Top is the Salami Supremo: tomato sauce, caramelized onions, piparra peppers, red onion, fresh mozz, San Gennaro salami, hot honey
Bottom is Leek & Hazelnut: caramelized onions, Cantal Jeune, fresh mozz, fresh leek, charred leek, hazelnuts, lemon, Brabander

Needless to say, it was expensive. Totally worth it though. Top notch ingredients & great flavor combos. But the crust was the star... perfectly charred with a good crunch, yet was still soft & chewy. Just incredible. They've easily moved into my top 5 Portland pizza spots. The Belgian endive caesar we had was no slouch either (not pictured because this is a pizza thread).

Some locals were touting this so I gave it a try. The potato, sage, truffle was fantastic and the pepperoni was kind of bad. Odd to have such a difference in quality. Makes me hesitant to revisit.

Potato on pizza is underrated. Used to get the rosemary potato from Pizza Metro on Division after drinking at Gold Star or Phyllis' Musical Inn at least a few times a year

Triple Beam is hit or miss in my experience. The first time I had it, it was phenomenal. There is a location in Santa Monica as well that we order from sometimes. The potato one is pretty consistently good. Not always thrilled with the plain cheese. They had an heirloom tomato seasonal option a while back that was phenomenal.
