Why a mistake? I love blending those two.
I have blended these in the past, especially when I use Galbani (which I enjoy when Provolone is used in small amounts). I am super lucky, the local store has Grande Mozzarella. The deli wasn't open but someone who worked there was under the assumption that the store labeled cheese was Grande. Which I am pretty sure it is.
Provolone plus Grande was just a bit too overpowering. There a lot more "tang" than I like. I have also had this happen when I have used my wife's starter to make dough. The wife agreed the cheese had too much "tang". I had some of the leftover mozzarella on tonight's garlic bread and there was definitely a "tang".
