Friday Saturday Sunday in Philly, a tasting menu restaurant has a cocktail bar on the first floor. Fibonacci sequence: Spin to any 5 ingredients, and you get a drink with the ratios based on the sequence, in the order they appear (from the top, 1, 1, 2, 3, 5 parts).

If a place is good enough for Jeremy to invade this thread, I suppose it's good enough for me! (I still don't listen to him about the Superbueno vodka y soda though.)

I was more than okay with this combo since it's all spirits I love. I also thought it might be something SAISON FUCK would like.

The bartender also recommended trying a similar combo with a spirit above or below the combo. Above was Cardamaro and below was Madeira. I opted for Cardamaro and it was fine, but this thing with the Smith and Cross really did fuck.

I also had the Rumor Mill (bourbon, Cardamaro, Sfumato, pictured below) and a Cynar Negroni. I'd planned to go out and about more but after four cocktails at this cozy place, I was pretty done. Thankfully Philly is just 1.5 hrs away so it's easy to come back.

Had the opportunity to visit Caledonia Sprits for the first time. Great place, cool vibe. Only downfall is it's in a cell dead zone and my outdated android phone wouldn't connect to their wifi.

First off was Holi-Bees Knees. Barr Hill Gin, lemon, honey mulled wine syrup. Great riff on the traditional bees knees.
Also, It's a Beaut, Clark. Fig infused Vodka, Disaronno, mandarin, raspberry brandy, honey, seltzer. Mandarin forward, everything played well together.

Next for me was Barely Legal. Shortbread infused Barr Hill Gin, brown butter washed Tom Cat Gin, strawberry honey, Cocchi Rosa, orange & cardamom bitters. Wasn't keen on this one.
Wife enjoyed Peepin' Aint Easy. Cinnamon infused Vodka, apple cider, spiced honey, cardamom, cranberry apple cube. Very good.

I sense this will become a regular stop on our VT trips.
 
I think I might just not care much for maraschino.
So I went on a little bit of a circular adventure last weekend. Started with a Last Word, which I don't dislike but the maraschino is not the MVP for me. Next up was a Final Ward, which I liked better, but mostly just because I really like rye. From there I went to a Monte Cassino, a Final Ward riff that replaces the maraschino with Benedictine and swaps in yellow chartreuse for the green. This was my favorite drink of the series. Lastly, it seemed logical to make a gin/lime version of the Monte Cassino, which I liked better than the Last Word.
 
Evidently I'm in my Aperol szn. Last night I revisited the Aperol Sour, which is still a banger, and tonight I made a Dunniette. I found a couple of different specs for this one, but the version I went for just subbed Aperol in for Cointreau in the Sunflower. Definitely adding this one into regular rotation.

Green Ghost

This used to be a go-to, but we haven't had it in a while. So long, in fact, that I forgot how I would modify the classic recipe.

We prefer Chartreuse forward and not too sour, so we did:
2oz London Dry gin
1oz Green Chartreuse
1/2oz lime juice

This is good, but maybe a touch more Chartreuse.

1/2oz lime juice

Second try:

2oz London Dry gin
1 1/2oz Green Chartreuse
1/2oz lime juice

Could use the tiniest adjustment up of lime, but not enough to make an attempt.

2oz Apple Brandy
3/4oz Grenadine
3/4oz lemon juice

OG calls for Applejack. Likely no difference. This is nice but If I make again I would drop the Grenadine to 1/2oz.

Applejack these days is not a cocktail ingredient IMO. It is mostly a neutral grain spirit with some apple brandy component. Lairds Applejack is 80% neutral grain spirit I believe.

You want that 100% apple brandy on the label.

A lot of chatter on the Whisk(e)y thread concerning Chartreuse. I have been out of Yellow for some time and have subbed green for my Greenpoints. While ok, it can be too earthy. Figured I'd give Strega a try. It's not bad. More candy than herbs. $30 price tag works. It won't go to waste but prefer the Chartreuse.
