Chefsteps' "rich af" cornbread, insane cornbread. A bit crumblely because I had to use gluten-free flour. Starts with frying corn kernels in butter so you know it's gonna be good.
New Braunfels smoked/peppered ham
Potato and celeriac gratin
Christmas lima beans with parsley, orange, Agrumato Tangerine olive oil, and shallots
Wild rice with Marsala, mushroom mix, and shallots
Corn pudding
Kale salad
Made some deer-ría (deer birria). Took some leftover masa preparada and made some sopes with the meat. Turned out pretty good, but probably need to add some fat to the meat next time.
Today: Waakye with stew, shito, horribly peeled eggs, and salad. Traditionally, this would also have spaghetti and gari. But for me, that's just too much to make and eat. Another time!
Yesterday: Potato and okra curry, adapted from the recipe below.
Got kinda tired of $12+ for jars of chili crunch, so I knocked out a big batch today. I got about 6 jars worth for a cost of less than $15. Very pleased with the result.
