What are you cooking???

This was the last ramp week for one of the bigger vendors. The season will likely be done in a week or two, so you have that much time to get here. I am sure sameasiteverwas would be happy to host you.

How different are they from leeks? Kind of wondering what I’m missing out on.
What Patty said. And flavor-wise, they're a bit more garlicky. The tops are soft and you can use them like scallion greens. The bottoms are obviously good for cooking, but also pickling.

Garlic spinach is not something I would substitute for ramps. That would probably be better as a nettle substitute.

Friend of mine this week actually made a heavenly looking ramp compound butter.
