What are you cooking???

My neighbor brought back and gifted us magret de canard séché (cured duck breast) from some village in France. This inspired me to make a meat and cheese board. When I was getting supplies, I saw bottles of Tilquin so that seemed like a wise choice.

Easy Sunday dinner that always hits the spot.

bigstrunso sent me this calabrasian pepper chili oil in the krampus bif. We were lit tonight and needing food. I had a baguette from a Vietnamese bakery down the street and some sliced mozzarella and grape tomatoes. I coated the tomatoes in a bunch of the pepper oil and into the oven at 450 until the skin burst. Made crostini from the bread, put the mozzarella on in the oven with the tomatoes, then topped with mashed up tomatoes. Holy shit this slammed.

In addition to the kofta we made last night, Fear is making red lentil soup for lunch and holy hell, I can smell the garlic cooking in my office with the door closed. 25 min to lunch.

I cooked nonstop today.

Fried up a tube of sausage (about a third went into our omelette and the rest was made into patties for future sandwiches).

Processes another 4 manilla mangoes for fruit leather.

Made a double batch of potato chip cookies (probably posted this recipe before somewhere - a white cookie base of mostly butter and sugar with wavy chips and butterscotch chipa).

Made this French-Mexican fusion take on French Onion Soup from Food and Wine:

uses chicken stock instead of beef for the broth and invites poblano peppers and cilantro to the party.

There are about a million variants. The cookbook I got my recipe from has 2. My grandma makes a third with brickle that is pretty dope.

You’ll notice these have a low flour to butter and sugar ratio. They come out looking raw. I cook them 12 or 13 minutes as opposed to the 10 in the recipe for a firmer cookie but they will be really flat. It’s fine. They are sweet and salty and the most popular cookie I make in terms of recipe/can you bring those requests.

Potato & cheese pierogis with sauerkraut and polish sausage on the side. First time I've ever made pierogi, but it won't be the last. Fan.freakin',tastic.
I have never made pierogi from scratch but am blessed to have always lived someplace where I can get solid frozen ones. When I feel fancy I order from Pietrzyk in Detroit for things like cheeseburger or reuben pierogi.
