Soup is a Magic Elixir

“Weeknight wedding” soup loosely based on the BA recipe. My girlfriend got her booster today, and it knocked her down pretty good so that means soup is needed. Also an excuse to use up rainbow chard from the garden.

I made this soup on Monday and it was awesome and so easy.

Yep, that's the one. Last night, I used pork for the meatballs, but it works with chicken, turkey, or whatever. I always add more carrots and garlic and then whatever small pasta I have in the pantry.

BA has a bunch of great "no recipe" meals, but they do require you to know how to cook (somewhat). I like adjusting meals to what I have at home, so they're great for me.

I feel like this has already been hashed and rehashed in this thread but I'm too lazy to look. I have a Hamilton Beach Crockpot and Zojirushi Rice Cooker, both of which I've had for 10+ years and still trucking along just fine. I don't have a pressure cooker. I love the set-it-and-forget-it of both of these devices, but at least with the crockpot, it still takes some time and planning to prep something cooking in the morning. What do y'all with Instant Pots like about them that would make you recommend them to others?

I use my instant pot regularly for a few things. Soups, artichokes, broccoli, and hard-boiled eggs.

It's really nice for soups because you can usually cook everything inside of it, and it's very quick. The pozole recipe I posted only took about 15 mins in the pressure cooker.

Soup and hard boiled eggs. It’s nice for relatively quick weeknight meals. The model I haven’t isn’t big enough to pressure can more than a few jars, so I don’t even try.

My girlfriend’s mom gave us hers since she wasn’t using or maybe had two? I got by without one for years, but it is nice. Maybe worth the investment if you’ve got kitchen space but it’s absolutely not required
 
I use my IP every time I'm making rice (specifically jasmine or basmati), hard boiled eggs, quinoa, a lot of soups... works well for mashed potatoes.. but my favorite and most often done is Indian and curries. Lentils/dal is really, really easy in the ip and holds well for lunch leftovers.

This week's lunch is IP cilantro lime quinoa with ancho chili red/yellow/green peppers and red onion, spicy lime black beans and a oj/cashew Chipotle pepper sauce. Ip works well for making larger quantities of grains.
 
Dude is largely insufferable, but this recipe is a family favorite.

I really need to get a chest freezer so I can make more stock. The Samsung fridge that came with out house has a side by side that's like 75% fridge and I have zero places to put frozen stock.
