I put this into my face space while grilling venison back strap last night.
Was actually surprised to realize this bottle is already a year old. Not sure if it was because I had a long day and just really in the mood to crush a tome or what but it really hit the spot. Still pretty linear and plain tasting but theres nothing bad about it. In fact, I had the bottle empty before the straps were done resting and needed to open something else to drink while eating.
Drank the latest in the series of dry hopped saisons last night. (The one with both Mosaic and Eukanot.)
While I appreciate the experimentation they are doing with these, im over it.
The nose was unmistakably dry hopped as it had more hoppy punch than I have ever smelled in a Fantome before. But the taste was strikingly more like a pils than a Tome.
Super bready/footy pilsner grain character with a ton of melon-like flavor that I typically associate with green yeastiness.
Im glad I only bought one bottle as taste-wise it was my least favorite of the 4 different ones they have done thus far. Though, the nose on it was in the top 2.

Fantome hard sparkling milkshake waterA little late but got the chance to try a bottle of Fantome Saison purchased stateside in 2014 alongside one purchased this year from Etre.
2014 had signs of being an older saison; more sweet and malty tasting. However, there was a sweet Starbursts candy character that made it really enjoyable. Sweet/tart fruits.
The more recent bottle tasted almost abrasive compared to the 14'. Phenolic, bitter and coarse. I guess I'll continue aging these to see what happens? It seems like a few years ago fresh bottlers were kind of heavy and sweet and needed a few months to lighten up. Now fresh bottles are very yeasty and bitter. What will the next few years bring?
Despite personally enjoying NZ hops, id greatly prefer they just drop the whole hop thing and let Dany go back to being more slack/carefree and doing what he wants (including not thoroughly cleaning/sanitizing everything.)That's just because Fantome is not using Citra, or experimental NZ hops. pfffffff. hazeboi.
