Fantôme

Will kick this thread off with a picture of a classic and easily attainable one (albeit via different ongoing batches.) This was the single best beer I have drank this past year. Classic saison surlie with a best by date of drink before end of 2018.

This particular bottle was like drinking the best typical saison you can imagine but with a tart intensity of fresh lime juice. When I shared this bottle, I instantly converted everyone present into believing in the ghost.
 
Some shelf turd ghosts I picked up.

Blanche. I love this ghost. I forgot what nuanced flavors were in it, but it plain and simple a nice treat.

30th Anniversary. This could use a lot more time in the bottle. Lingering notes of tobacco and chewy fruit. Opened this on Sunday and let it sit in the fridge corked and still plenty of carbonation and let some of the ghost calm down and enjoyed it.

This is a fresh saison that I think is currently still available on etre with a best by 2022 mark on label. It is slightly over-carbed in that it doesnt gush but it is very lively on the tongue and you cant get a full pour without 75% of the glass being foam.

Once the beer degasses a bit it really opens up showcasing some citrus-like zesty bitterness along with hints of melon and pepper. A true representation of Fantome in that start to finish, every glass throughout the bottle was different.

Drank this for breakfast yesterday paired with a baker’s dozen quail eggs fresh from the back yard and Dave’s good seed bread.

I had to revisit the krieken awakes because my first time through I was busy doing other shit and didnt give it a whole lot of attention other than getting it into my mouf.

Again, its a little over-carbonated and even after getting 8-10oz out the bottle, the rest decided to slow gush pushing foam out the top.

This feels like a bitter porter/saison hybrid leaning more towards the earthen porter but has the expected saison dryness but is lacking the expected yeast footprint.

The cherry inclusion is faint at best, but if you search and tell yourself it has to be there, you might find it. If the Fantome house magic takes hold in this one, it could truly turn into something special down the road...guess we will have to wait and see.

A friend opened a Clos Preal b1 last week. Got. Damn. Far and away the best tome I’ve ever had, and one of the best beers, period. Just crazy good.
Its been 7 years since I last had one of the black foils. I recall that beer being insanely delicious right out the gate and the batch 2 gold foil being just ok when fresh and significantly better with a couple years on it.

I need to see if I have 1 buried somewhere.
 
Have a Ghost in the Kettle I think I'm gonna hold onto for at least a year seeing what the other Knowers have been saying about it. Pretty sad about the lack of tome drops in CO but we have a new distributor in the state that's actually been bringing in some good Shelton stuff. Fingers crossed for more tomes.
