Thank you. I enjoy the built in inspiration holidays provide. It requires less thinking (sometimes overthinking) about what I want to make.
I love a food holiday. We ended up taking advantage of the cheap cabbage and some other things we had on hand and making a galumke stew (still celebrating Pulaski day, I guess).

Damn. I missed that one. I would have made haluski. But definitely loading up on discounted corned beef this weekend.
We did haluski last week. Chicago goes hard for Pulaski - I have taken the day off the last two years and gone to Maplewood for Cashmere Pulaski Pils and Polish meat cart.

Arepa battle in World Geo. Venezuela vs. Colombia. Venezuelan arepas were topped with shredded beef. Colombia was arepa de choclo con queso. Students picked out the recipes. I guess i like them enough to buy halal beef. I prepped and cooked. Colombia was the winner hands down.
One of my favorite ways to cook veggies lately has been to boil green beans until they're just shy of done and then transfer them into a pan with already sauté-ing garlic and diced chilies to finish and then hit it all with a little grated cheese
