It was a good pie weekend. Saturdays dough wasn’t as lofty, but Sunday had more chew. Upped the oil ratio for a nice crunch.

You wouldn’t believe it but I’m seriously stretching the dough to windowpane and taking out so much gas at the edge. The Gozney is just hot AF, so gotta figure out how to dial it down. Still tasty.

The Casey's branded jalapeno cheese puffs however are exceptional.

Out of the case or fresh. When they make it fresh I really like it. Bbq chicken or taco.

I've had and liked the breakfast slices out of the case before. The sausage was pretty damn bad.

Had a small leftover NY style dough ball from last night.




This is one of the smallest pies I have made in a long time 14 1/2". I am pretty proud of the coloring. I threw in some provolone below the mozzarella, that was a mistake.
