Mexican Food Supremacy Thread

I randomly decreed that I would eat an average of one taco a day for Dry January. In addition to the guys giving me endless shit for doing DJ at all, they convinced me to push my goal to 50, then they muscled in and turned it into a competition.

Anyway, it turns out there is no upper limit to how many tacos I can eat in a week before I get sick of them.

Just a taste. I'm over 50 already. I'm winning, but not by much.
I want 50 tacos.

Tangential but Mexican food (and particularly tacos) are pretty much the only affordable food left in LA at this point. Last week we were on the way back from a bball game and told the kids we'd stop at a taco stand by our house that we had driven by but never been to. 4 tacos (number is low because I did not get anything since they had nothing vegetarian) and a 32 oz piña agua fresca was $12.

A pizza from any decent place is like $25 minimum, and it's rare to see a burger under $10.

The sidewalk taquero with al pastor on the spit and a huge pot of meats with fat bubbling over did not have a great veggie option, no. I'm sure I could have asked for a cheese quesadilla but it would have been completely coated in meat from everything else on and around the grill.

Most brick and mortars have some good veggie options. I have a don't ask don't tell about tortillas and rice (I usually order black beans rather than pinto/refried to avoid that avenue of lard).

Now I wanna know how many I could do.
 
Question from another unrelated person I've got contemplating this challenge:

What kind of meats are you doing? A variety every place or are you finding variants on a theme?

My holy trinity is pastor, carnitas, chorizo.

They will quickly tell you:
1) do they use a trompo, or grill everything?
2) do they season well, and distinctly? (Hard to underflavor chorizo)
3) are all their meats fatty, or do they break that down and incorporate it well?
4) do they get the texture right?

If I get more, I'll get carne asada, lengua (not available everywhere), buche (extremely uncommon). I don't bother with pescado since San Diego ruined me. I never get pollo.

Always first bite plain, then layer on salsa and escabeche as needed.

I do single-tortilla some of these, because I don't have the appetite of a young man anymore.
 
been too long since my last La Capparrita. This will not stand.
I usually get lengua, cabeza and one other depending on what I am feeling.
