This sounds maybe more promising than most new Tomes in terms of long term potential?
Maybe. I certainly hope. I mean, at least I’m not saying “hopefully this isn’t like drinking cotton soap someday” when I tuck the other one away.

Of the recent releases, the Automne stuff has been a lot of fun, recent Chocolat has been ok, and Silos & Summits is really nice. The rest has been bitter af.

Sold to me as “purchased from a bottle shop in 2009” without any perceptible dating info otherwise. Cork was damp with black/brown liquid under the cap consistent with age estimate. Tastes of dark fruit, leather bound book, herbal, unsweetened oatmeal raisin cookie. Less diversity between first and third pour than expected. Showing age but very drinkable. Maybe not a funk home run but enjoyed it plenty

Apparently the first batch of this was not great. This Jan 2021 bottling is OUTSTANDING. One of the best Tomes I have had in a long time. The coffee is still tasting of coffee and not green pepper. Great saison black pepper flavor and just a hint of funky tartness. I LOVE it.

Just beautiful, lot n° 1 a A 15 best by 2018, sourced from Ebenezers last year. First pour was a heavier bodied, sweet honey pollen dandelion funk party with a hint of oxidation. Second pour was similar with a somehow more expansive in the mouth effervescence and turned up funk. Dreg pour was divine. I didn’t want this bottle to end.

Pretty chill, smooth saison with a pale “flavorless orange” and vague herb and spice accent to some solid funk. Low carb, really easy to drink after some light yard work.

No idea how I got this, wish I had gotten a few and have been curious to try it for years, couldn’t wait any longer. 2016 bottling, if anyone’s sitting on a few and wants to trade one lmk, would enjoy revisiting in 5 or 10

I know ive been largely absent from this thread/site other than the getting healthy and lifting heavy weights convos but needed to check in here with an absolute diamond.

May 2009 bottle. This is in the conversation for top 10 best beers ive ever drank.

Every single sip differs from the prior. Pineapple, strawberry, tart citrus akin to lemon, lime and oranges with biscuit-like malt character and the age old fantome house/brett character I struggle to find in bottles after the era of early 2000’s that is nearly akin to a lambic funky finish. Absolutely astounding!!!!
 
Finally getting into a Nuit, Laphroaig barrel. Slightest of hiss when opened, no carb at all. Just gobs of peaty goodness. Rich dark fruit with a dry ash finish.

Rare Pissenlit miss for me, a few bottles have been among my favorite Fantome experiences ever. I wanted to introduce some saison lovers to the wonders of aged tomes last weekend. One said it was a pretty good BW if that’s what I had told him it was. GetchaPull graciously sent me two of these, can’t wait to see what the next one tastes like. I’m optimistic :)
