Rutabega /Swede is one of my favourite weekly conversations at the grocery store.

Do you put in the fish first?

I love fish+eggs. One of my favorite meals I've had since moving to the south was fried flounder+2 sunny side up eggs+grits+french toast.

melt butter first. Turn the fish in it. Season fish. Cook at 400 for 4 minutes. Crack eggs into the pan. Season them. Back in the oven for 7-8 minutes. That’s for a bit runny eggs. Put them in earlier for firmer yokes. Mix parsley, capers and scallions for garnish.

Try it with some speckled trout or even redfish. It’s delicious! Little hot sauce and off to the races
