Casual Lambic Thread

I find it helpful information on a review, especially if the expectation is the bottle is usually carbed. The De Cam 5 year is a new offering, so it’s informative for everyone. Now if the posts were on GCB.. that’s a different story haha.
So its just me that when I see “lambic” on a bottle, I am expecting it to be flat and surprised when its carbed?

Im only saying this because I see a lot of people saying “still/flat” like its a bad thing. I mean, if you opened a geuze and it was flat I would totally understand.

But I thought lambic was suppose to be flat or low carb?

I don't assume anything with De Cam bottles. De Cam Nectarine Lambiek sometimes has carb...yes it's fruited, but it does say lambic on the label.

I personally don't like still beer so ya. The De Cam 5 year would have been a lot better gassed up.

I was only surprised bc the other fruited 3F beers I’ve opened recently have been fairly carbed. And other bottles of the same beer had carb too

Re: supposed to be flat or low carb — I think it just is what it is. If you’re not intentionally adding sugar to feed the yeast and produce CO2, then it’s not just gonna magically carb up. My thinking was adding berries is a form of sugar addition, but I’m sure it’s not that simple

Some have said the acidity or some other element of the fruit I’m misremembering disrupts carbonation. Maybe some oils from the cherries? Idk what I’m talking about.
 
Late night lambic.

Another Compton25 bottle. Super interesting. If I had this blind I would have assumed AWA instead of lambic, but I would have easily put it on top tier AWA. Smells almost like a SARA beer, and frankly has a lot of similar qualities in flavor profile, but this is far more tart. I taste more lemon than I do muscat grape but I can taste the grape there. Overall a good beer, but I can tell my stomach will not be happy with me for drinking it. Thanks again Compton!

Y’all know what time it is.

Hommage 19/20 blend 110 (holy crap they did a lot of blending this season). 8.8% which seems wild for every day fruited lambic. Starting to get back to a more jammy, less in your face acid, type profile. No tomato juice or copper flavor issues like in paper label days. This is far better than the previous years 375ml releases. Still a little more on the acidic side of things for my tastes, but finishing a full bottle of this feels like a treat instead of a chore. Hopefully things continue to trend well.

Magic Lambic - Still love it but vanilla has faded since I last opened one in November

Menu Penis - Really good, nice funk, like a good batch of Vig

Zenne no 92 - It’s hard for me to just not chug this

Aronia Lambic - Smell was incredible, taste was tobacco spit. I think JVR spat some Copenhagen in each barrel. Took me the whole bottle to decide if I liked it or hated it and still wasn’t sure at the end.

Aronia berries can take a while to settle down. Not sure what the age out rate would be in lambic or if they would just get more astringent from the lambic special blend. In mead it takes a while to go from tasting like “oh this is why they call them chokecherries!” to tasting like other dark tannic berries but the aging curve is different. Lambic tends to present more tart and less fruity over time where as mead tends to soften sharp edges so I am not sure time does aronia berries any favors here. Sounds neat though!

We nursed the bottle and let it breathe for a while, and the tobacco did settle down. The first sip was almost like when I accidentally picked up my Pap’s spitter when I was 3. Only more berry-ish.

But it grew on me with each subsequent sip. The nose was phenomenal.
 
Quick side by side with some ‘19 baby bottles. Both fairly high ABV for 3F but I’m a Boon VAT whore so it’s welcome. OG a little too acetic and overbearing, but has great dishwater funk on the nose. A&G is darker and smells cleaner, drinks easier with a bright lactic/bitter bite. A&G drinks funkier but OG smells way funkier. Don’t really love either. A 50/50 blend is good.
