Mixed Drinks

I’ve been to tiki bars in at least 15 countries, and Waikiki Tiki Room in Mexico City is a world-class spot. Highly recommend!

Pictured are two drinks that I can’t recall the names, and a Painkiller in the skull. The Zombie there is also ridiculous. Somewhat related—I had a smidge of a hangover this morning.

Prepping for the show tonight. Partially cut with water. Not trying to get hammered. Just a little something to whet the whistle over the four hours of music.
 
Tyrsis have you played around with the St. George spiced pear brandy/liqueur? I've been trying to work it into something at work to feature but everything I try, it gets lost in everything else. Maybe a mule? Already have a pear martini that does well so I'd like to avoid that, but appreciate your knowledge here.

Yes actually. False Idol does a riff on a Pearl Diver called the Polynesian Forty Niner. It is basically my favorite tiki drink (next to a Nui Nui.) I made them on my first Tiki Party.

I fucking love a Spaghett.

They were briefly a big deal a few months back. Like there was one weekend in August where everybody I know was posting pictures of Spaghetts on social media. They have become a go-to for me since, and in fact I had a few this weekend.

5 forks, total drank, would recommend.
 
My new working from home 3:30pm tradition: pour the morning's leftover coffee (Dark Matter Giant Steps, since that's what I stocked up on) into an ice-filled shaker, add a splash of heavy whipping cream, a teaspoon of sweetener (monkfruit/erythritol simple syrup if I want to keep it sugar-free, barrel-aged maple syrup if I'm in a "fuck it" mood), and a healthy splash of bourbon (today was Elijah Craig Barrel Proof), and shake until it's nice and creamy. Makes afternoon conference calls more tolerable.

Sounds pretty good. All zero calorie sweeteners taste like shit to me, though, so maple syrup all the way. Also, "leftover coffee" is an odd phrase.

That's a good point - "unclaimed coffee" would've been a more accurate phrase, because I've been polishing off anything that's left after my wife and I both fill our mugs before we start working.

Maple syrup is absolutely the more-delicious option, but the zero-cal sweetener tastes perfectly fine if your bourbon splash is big enough ;)

Anybody have a Painkiller recipe they like? I made one today using what seems to be the standard recipe and it seemed like it was off a little. I’m gonna do some more, uh, tests in my lab tomorrow, but I just wanted to check in with the tiki brain trust.

Painkiller is a weird drink in that is it is:
  • huge (volume wise)
  • Mainly just sugary fruit juice

The GOOD thing about a Painkiller, is that they come in #2, #3, #4 varieties. For every number, add one more ounce of rum. Also, if you're not using Pusser's, you're doing it wrong.

If this isn't your cup of tea, you can amp up the complexity a bit with a Pain Killada.

Yeah see the size of the drink is what was fucking me up. I like the flavors, and I went out of my way to get some good fresh not overly sweet juices, but it wasn't really coming together for me and seemed a little weak. More/different rum, adding a cinnamon component, and maybe just a touch more citrus might be the answer.

In case anybody doesn't want to watch that whole Pain Killada video, this is the recipe he ultimately gives:

2.5 oz navy strength rum
3 oz pineapple juice
1 oz coconut cream
1 oz cinnamon syrup
1 oz tangerine juice*
garnish fresh grated nutmeg garnish dried pineapple ring & pineapple fronds (optional)

Shake all (except garnish) with ice. Fill a tiki mug or rocks glass with crushed ice and double strain the drink into the glass. Grate fresh nutmeg generously over the top and optionally garnish with fresh fruit. *if you have to sub orange for tangerine, use Cara Cara orange juice.


So I am going to see if I can get or quickly make some cinnamon syrup, or maybe just heat some of my coconut cream with a few cinnamon sticks.

Update: I couldn't procure cinnamon syrup and was too lazy to get cinnamon sticks and heat it up with coconut cream. The typical painkiller recipe calls for 4 oz pineapple juice and 2 oz rum. I adjusted to 3 oz pineapple juice and 2.5 oz rum, added juice of like 1/4 lime, and a splash of curaçao. I don't know if that makes it a different cocktail, but I am VERY happy with it. It just needed more citrus, guys. So here's my final recipe, which I will be using henceforth:

2.5 oz rum
3 oz pineapple juice (I used Trader Joe's cold pressed fresh juice)
1 oz orange juice (also TJ's)
1 oz coconut cream (I got the squeeze bottle stuff, which works out since Goya is now cancelled)
1/4 lime worth of fresh lime juice
splash of curacao

I dropped in like enough ice cubes to full the shaker a little more than half way. Shook it for like 12 seconds. Strained over ice in a chilled glass. Shook nutmeg over top. It slaps.
 
Forgive my typos I am on much rum.

Tonight I workshopped my Navy Grog and Juglebird recipes. They both fuck. Lets do this one at a time.

NAVY GROG (with my small alterations)

1oz dark Jamaican rum
1oz demerara rum
1oz light rum
3/4oz lime juice
1oz grapefruit juice (traditional recipe calls for 3/4oz, I think a full oz gives a better bite)
3/4oz soda water
1 oz 50/50 honey and water mixture (look it up)

Fill the shaker like half way with ice and shake the bitch for like 15 seconds. Strain over some kind of singular giant cube into a double old fashioned glass. I have some of those big ice balls for whiskey and that was sufficient. The traditional recipe calls for some hyper specific ice cone thing that I will find a way to make eventually, but for now the ice ball is fine.

Warning: ITLL GIT U DRUNK

JUNGLE BIRB (also with my small alterations)

1oz Campari (or Cynar or whatever; the original recipe says 3/4oz but I wanted a little more)
1/2oz lime juice
1/2oz Demerara syrup (I think simple is technically fine, but I happened to have Liber Demerara and it was good)
1 and 1/2oz dark Jamaican rum
4oz pineapple juice (you could probably do a little less, depending on the sweetness of your juice)

Fill it a little more than half way with ice, shake that motherfucker for 15-20 seconds, and dont strain it just pour it all into a a 12oz+ glass. Not as strong as the navy grog, but it aint fuckin' around either.

I bought the Beachbum Berry TOTAL TIKI APP recently so expect more very drunk tiki cocktail recipes going forward.

I can also highly recommend the app. You can put in all the ingredients you have and it will tell you all the cocktails you can make. An excellent value. PM with any questions.
